We strive to reduce our footprint on the world and negative impact. To us, this means sustainable, seasonal cooking, with few food miles, and using every part of an ingredient. At its core, it’s good housekeeping, and to us the best way to run a restaurant.

Artisanal suppliers
We seek out and nurture a strong network of small, independent farmers, growers, and producers from farm to sea. Being based in Tunbridge Wells, Kent, the Garden of England, while also only a short distance to the sea, we showcase the best that our region and Britain has to offer.
We take great care and pride to meet all our suppliers and visit their farm, forest, river, warehouse, or barn across the country to make sure we have first-hand knowledge, experience and relationships with the produce and the people whose hands create, grow, or farm them.
History
Family business
The Counter, led by chef owner Robin Read, was born from a long family history of serving the best produce over a counter. His maternal grandfather was a Master Butcher in Rugeley, Staffordshire, while on his paternal side, his great-grandfather was a Greengrocer in Lewisham, South London.
